Recipe to try: Panquemao

I found this recipe at : http://www.cocinandosabores.com/2013/02/panou-panquemao.html and used google to translate it.  Now I'm going to quadruple the quantities.....


Ingredients

4 eggs 
160g mild olive oil or sunflower oil
260
g sugar
160
g milk
1000
g flour
60
g fresh yeast

 lemon zest


For decoration
 
1 egg beaten
 
sugar 


Directions


Preheat oven to 350 º F Prepare baking trays with parchment paper

 Dissolve yeast in warm milk, about 110F

 Incorporate in a bowl the eggs, sugar, oil and lemon zest.  Mix well .When milk is foamed with the yeast added to the egg mixture and finally incorporate the flour.  Mix well and remove from bowl.

Put the dough in our work surface and knead well until we get a smooth batter without lumps , put it in a deep bowl, the cover with a kitchen towel and let rest until doubled in volume approximately 1-1/2 hours


After the dough has risen enough, remove the dough from the bowl and knead to lightly degas the dough.


If we want to make small panquemaos split the dough into portions each about 80g each.  shape them into round balls.  Let them rest on the tray about 15 minutes away from drafts , in a warm place.


Paint with egg and sprinkle each roll generously with sugar.


Place the trays in the oven and let bake about 15 minutes , remove from oven and let cool on a rack.



They are ideal for breakfast or snack with a cup of hot chocolate

Results:

The dough did not rise, so I must have mucked something up in the process.  I may go back to the original and try it in the quantities specified.  I've found another recipe I'm going to try first.
