Volleyball, 1-2

We were close in the games, but in the end, we weren't able to stay with them.  Losing about 15-21 in the first two.  I think we won 15-11 in the third.

I had one good opportunity at a kill last night.  As I was swinging, a ball came onto the court and cancelled the point.  I could not stop the swing.  It was a nice swing.  But, completely moot.

Aftermath:

Took a bit of a tumble when working with Trey and landed hard on my knee.  Even with the knee pads on, it did swell up some.  I iced it overnight and it's sore still, but the swelling is 98% gone.  It might be sore because the ice pack rested on a bone for a while.  It feels bruised, but it might be a ligament.

Recipe to try: Panquemao

I found this recipe at : http://www.cocinandosabores.com/2013/02/panou-panquemao.html and used google to translate it.  Now I'm going to quadruple the quantities.....

Ingredients

4 eggs
160g mild olive oil or sunflower oil
260
g sugar
160
g milk
1000
g flour
60
g fresh yeast

 lemon zest

For decoration

1 egg beaten

sugar

Directions

Preheat oven to 350 Âş F Prepare baking trays with parchment paper

Dissolve yeast in warm milk, about 110F

Incorporate in a bowl the eggs, sugar, oil and lemon zest.  Mix well .When milk is foamed with the yeast added to the egg mixture and finally incorporate the flour.  Mix well and remove from bowl.

Put the dough in our work surface and knead well until we get a smooth batter without lumps , put it in a deep bowl, the cover with a kitchen towel and let rest until doubled in volume approximately 1-1/2 hours

After the dough has risen enough, remove the dough from the bowl and knead to lightly degas the dough.

If we want to make small panquemaos split the dough into portions each about 80g each.  shape them into round balls.  Let them rest on the tray about 15 minutes away from drafts , in a warm place.

Paint with egg and sprinkle each roll generously with sugar.

Place the trays in the oven and let bake about 15 minutes , remove from oven and let cool on a rack.

They are ideal for breakfast or snack with a cup of hot chocolate

============================

Results:

The dough did not rise, so I must have mucked something up in the process.  I may go back to the original and try it in the quantities specified.  I've found another recipe I'm going to try first.

Recipe to try: Another Panquemao

This comes from thefreshloaf

Ingredients:

Bread flour : 500 gr bread flour
Eggs: 2 large
Water/Milk: 130 ml
Olive oil : 100 ml
Sugar: 100 gr
Honey :  20 gr
Salt :  7 gr
Lemon or orange zest
Orange flower water (some drops)
Yeast:  5 gr

Garnish:

One beaten egg and more sugar for garnishing.

Directions:

Make a solid preferment some hours before with some of the flour, some of the water or milk and a pinch of yeast (we call this sponge). For example, 100 gr of flour, 65 ml of milk and a pinch of yeast.

Mix and knead the rest of the ingredients, shape a ball and let it rest at room temperature until triplicates its size.

Divide in small pieces and shape round balls.

Ferment at room temp for 1 hour

Ferment in the fridge overnight

Warm up 1 hour before baking

Paint with beaten egg and dust sugar.

Bake it at 350F, until it gets good color.
